What are the practical and useful differences between the 7x, 8x, and 8.5x 42mm binoculars these days?
The 8.5x was some compromise. I'm sure the Big 3 started it, now there are others in that format. I see it as a slightly improved 8x for those with desire for 10x but shaky hands.
But there are good models, so pick them for the binocular, not so much for the power.

Wasn't it Swift who made the 8.5x notable amongst birders? I am certain the Audubon was a well established binocular long before Swaro dreampt up the EL.
